Apprenticed at Claridges Hotel ,London in1972. Where I learnt the basics of Classical French Cooking this was followed by the Café was from here I decided that I need to go to France to progress my career Six years in France followed ,working in 1 and 2 star Michelin Restaurants , working with the best Chefs in the South of France,Notably at the La Reserve de Beaulieu, Grand hotel Cap d’Antibes ,The Byblos St palate tuned ,my enthusiasm boiling over and eager to prove myself , I returned to London where I met my wife Belinda and worked as executive sous chef at the Hyatt Carlton Tower, I did the opening of the Groucho Club in Dean Steet , when the owners of Walton’s restaurant in Knightsbridge called me 1985 I jumped at the chance to lead the team at this Michelin starred restaurant, I stayed here Star intact until I emigrated to Australia in 1988. 

Having been in Australia since 1988 having had 3 critically acclaimed restaurants in Perth ,and Melbourne ,winning State awards and the prestigious Gourmet Traveller Restaurant of the year in 1994. it is in Australia I further enhanced my reputation using the finest local ingredients with classical french technique developing many signature dishes We moved to the gold coast in 2001 where I was excutive chef at Michaels riverside Restaurant for 5 Years before I decided to open the popular Jonez on Food in Sanctuary Cove . Where the philosophy of fine food and service is well practised.
